The micro-region where he lives is known as Idedo and is renowned for producing the finest quality Yirgacheffe-type coffees due to its elevated altitude and relatively cooler climate.\u003c\/p\u003e\n\u003cp\u003eThis is a natural (dry) process coffee and so we are roasting it lightly -- barely even out of the 1st cracks. It has some berry and chocolate notes that come right out, and a nice acidity. After a couple days post-roasting it, we notice some pineapple acidity and citrus flavors coming out. It doesn't matter if you get it a few degrees too dark. It's just good coffee. Compared to most natural processed coffees, it's fairly easy to roast and easy to brew.
